Chic Cuisine: Super Healthy Meatballs with Wholemeal Spaghetti

This hearty and healthy dinner is one of my personal favourites. The meatballs are so easy, while being extremely low in saturated fat and calories. The wholemeal spaghetti is a low GI food which means not only is it high in fibre but it keeps you feeling fuller for longer. The mozzarella in the middle of the meatballs is an added dimension which is not necessary but delicious. The little egg is used to bind and hold the ingredients together. I know soaking bread in milk may seem a little bizarre but trust me – it’s my secret to keeping the meatball moist and tender. To make this dish even healthier you can add some grated carrot or courgette or some mushrooms and peppers to the rich tomato sauce.

Super Healthy Meatballs with Wholemeal Spaghetti

  • 400g minced pork (for an uber healthy choice I love turkey mince)
  • 1 onion
  • 2 cloves garlic
  • 1 tablespoon good quality pesto
  • 1 slice low calorie /wholemeal sliced bread
  • 5 tbsp slimline milk
  • ½ egg
  • 100g low fat mozzarella cheese
  • Salt and pepper
  • Spray oil

Tomato Sauce

  • 1 onion
  • 2 cloves garlic
  • 1 tin tomatoes
  • 1 Tbsp red (sundried tomato) pesto
  • 1 small glass white wine
  • 1 tsp sugar
  • Salt and pepper

Method

  1. Begin by preparing the meatballs – these can be made in advance up to 24 hrs and refrigerated.
  2. Dice the onion and garlic –Using spray oil gently sauté over a medium heat for 5 mins.
  3. Soak the bread in the milk
  4. In a large bowl combine the mince, pesto, egg, seasoning, bread and softened garlic and onion. Squeeze everything together using your hands.
  5. Prepare an oven tray with spray oil and preheat the oven to 200⁰c.
  6. Using wet hands shape into 6 large or 9 smaller meatballs. Using your thumb press a small ball of mozzarella cheese into the centre of the meatball and cover over.
  7. Pop the meatballs on the tray ready for the oven.
  8. Begin the tomato sauce – dice the garlic and onion and again gently sauté. After 10 mins add in all the remaining ingredients and simmer for 15mins.
  9. At this point put the wholemeal pasta on to boil and pop the meatballs in the oven for 15 – 20mins.
  10. Serve up in warm pasta bowls – spaghetti on the bottom, meatballs on top, smothered in tomato sauce and garnished with fresh basil leaves and some parmesan shavings.
